I like the concept of kebabs. Pretty much anything can go on a bamboo skewer; you can make them fast if you are short on time, or if really organised have them marinating all ready to go. The kids can help with the threading on and also learn and take responsibility for the cooking process (depending on age of course).
Ingredients
½ tsp | Garlic, grated (optional) |
2 tsp | Runny honey |
½ tsp | Ginger, ground |
2 tsp | Soy sauce |
2 tsp | Olive oil |
600 g | Chicken tenderloins (Main) |
8 | Bamboo skewers, soaked in cold water for 30 minutes |
Directions
- Mix the five marinade ingredients together, then add the chicken and thoroughly rub into the tenderloins. Leave to marinate for up to 12 hours. Thread on bamboo skewers.
- Cook under a hot grill, or on the barbecue for 8-10 minutes. Serve with "mountains" of steamed rice made by gently pressing hot rice into lightly greased cups. Tip out and conquer with a flag on top!
