This simple vegetable salad is a refreshing accompaniment to Indian curries and meat dishes. Try it with Laurie Black's tandoori lamb cutlets with ginger raita.
Ingredients
¾ | Telegraph cucumbers, deseeded and cut in 1.5cm dice (Main) |
3 | Tomatoes, cut in 1.5cm dice |
½ small | Red onions, thinly sliced |
½ | Red chillies, finely diced |
2 Tbsp | Fresh mint |
2 Tbsp | Fresh coriander |
1 | Lime, freshly juiced |
Directions
Toss all kachumba ingredients together and season with a little salt.
