In between sweet treats that are heavy on the sugar and butter, I like to fill the tins with healthy slices. This recipe caught my eye while researching Jazz apples. It made a delicious but very crumbly slice, so I have adapted it slightly to make it more firm and lunchbox friendly.
Ingredients
4 Tbsp | Peanut butter, crunchy |
150 g | Honey |
1 tsp | Mixed spice, ground |
120 g | Rolled oats (Main) |
50 g | Wheat bran |
100 g | Dried fruit, such as cranberries, raisins, sultanas |
50 g | Macadamia nuts, or walnuts |
1 | Apple, I used the Jazz variety, unpeeled and cored |
2 tsp | Sesame seeds |
Directions
- Heat the oven to 180C and grease and line a 20cm square tin with baking paper.
- Soften the peanut butter in a bowl, mix in the honey, spice, oats, wheatbran, dried fruit and nuts.
- Chop the apple finely and mix into the oat mixture, with wet hands is best.
- Spread the mixture into the tin and press in firmly with the back of a spoon. Sprinkle with sesame seeds and bake for 30-35 minutes until browned.
- Cut into bars while still hot, then leave to cool in the tin. The bars will keep for a week in the fridge.
