This is one of our quick-fire, easy but healthy weeknight meals... everyone loves this and 20 minutes max to make...
Ingredients
1 cup | Medium grain rice |
2 cups | Water |
700 g | Salmon (Main) |
2 Tbsp | Teriyaki sauce |
2 tsp | Sesame seeds |
1 sprig | Coriander |
Directions
- Wash the rice - until the water runs clear - then add the water and cook (your favourite way or chuck it in the microwave for 15 mins) Place the salmon on a roasting dish and drizzle with teriyaki sauce and sprinkle with sesame seeds. I sometimes use salmon pieces or fillet and sometimes salmon offcuts - made into little piles - whatever you like or is most available. Place under a hot grill, until cooked - this will take about 5 - 8 mins. Serve the salmon atop the rice, and any juices spooned over as well - garnish with a little coriander or lemon juice. Week night dinner.
