These kid-friendly spud dogs use potatoes instead of rolls and can be made by junior cooks in your household. One potato takes about 3 minutes to cook using a 1000 watt microwave oven. Four will take 10-12 minutes. Hold each potato with a clean tea towel when cutting to prevent burning your fingers.
Ingredients
4 medium | Potatoes, use a variety suitable for baking (Main) |
1 tsp | Olive oil |
8 | Breakfast sausage (Main) |
4 Tbsp | Tomato chutney, or similar; use up to 6 Tbsp |
1 bottle | Dijon mustard, choose one in a squirt bottle |
Directions
- Wash the potatoes and dry. Prick once with a fork. Place on a paper towels in the microwave oven. Cook on high power for 10-12 minutes, until cooked. Turn over half way through cooking.They will be soft when pressed.
- Meanwhile, pour the oil into a non-stick frying pan and place on medium-low heat. Pan-fry the sausages for about 5 minutes turning often, until cooked.
- Carefully cut the potatoes in half lengthwise almost through to the other side — they will be hot. Fill with the chutney, sausage or sausages. Drizzle with the mustard.
