Cut cucumber and avocado into pieces that are manageable to eat with a fork.
Ingredients
| 1 | Telegraph cucumber, cut in half lengthwise, seeds removed and cut into small pieces (Main) | 
| 1 | Avocado, halved, stone removed, peeled and cut into small pieces (Main) | 
| 1 | Spring onion, trimmed and finely sliced | 
| 2 Tbsp | Mayonnaise, trimmed and finely sliced | 
| ½ | Lime, juice only, add more to taste | 
| 1 dash | Hot sauce, such as Sriracha hot sauce | 
| 1 small handful | Coriander leaves, roughly chopped | 
Directions
- Place the cucumber, avocado and spring onion in a bowl.
- In another bowl, mix together the mayonnaise, lime juice, hot sauce and season with salt to taste.
- Add the mayonnaise mixture to the salad ingredients and gently mix through. Add the coriander and roughly mix through.
