Ingredients
1 | Lime, peeled and the peel dried in microwave for 20 minutes (Main) |
1 tsp | Chilli powder |
3 Tbsp | Honey, warmed |
1 tsp | Salt |
1 cup | Roasted peanuts (Main) |
Directions
- In a coffee/spice grinder, blitz the lime peel to a dust. In a saute pan, heat the honey, chilli powder, lime dust and salt.
- With a spatula, fold through the peanuts until well coated (they may clump a little).
- Pour nuts on to parchment paper. As soon as mixture is cool enough to handle, break into small clusters.
- Store in an airtight container.
