This much-used Chinese sauce is de rigueur for Peking duck - it's spread on to thin pancakes which then are rolled to encase roasted duck meat and batons of cucumber and spring onion. It's available in jars but is easily made at home. Roasted peking duck can be bought from Asian food stores or else make your own from the recipe here. Click here for our pancakes for peking duck.
