Set summer days aglow with sweet corn on the cob - especially delicious with this herby butter that incorporates goat's cheese.
Ingredients
100 g | Butter (Main) |
100 g | Soft goat's cheese (Main) |
1 | Garlic clove, crushed |
1 | Lemon, zest |
1 tsp | Salt |
1 handful | Fresh herbs, I used basil, chervil, oregano and mint |
Directions
- Into food processor add the butter, soft goat's cheese, garlic clove, lemon zest, salt, freshly ground black pepper and the fresh herbs.
- Blitz until smooth, turn out on to greaseproof paper and roll into a log (twist each end). Refrigerate until hard.
- To serve, slice small rounds of butter and rub into hot corn cobs (or steaks).
