This kid-friendly pasta can easily made by the kids themselves. Blanched vegetables, such as peas, beans and corn kernels, could be added to the eggs and cream.
Ingredients
1 pinch | Salt |
250 g | Penne pasta, dried, about 2 cups (Main) |
150 g | Ham, thickly sliced, lean (Main) |
2 tsp | Olive oil |
2 | Eggs (Main) |
¾ cup | Light cream, or evaporated milk |
75 g | Tasty cheese, about 1 cup, very finely grated |
3 Tbsp | Chopped chives |
Directions
- Bring a large saucepan of water to the boil. Add the salt. Slowly add the pasta. Boil until just tender. Drain through a sieve and return to the saucepan.
- Meanwhile, cut the ham into chunks. Heat the oil in a small frying pan. Add the ham and sauté, until browned.
- Place the eggs and cream or milk in a bowl and whisk until well combined. Add ⅔ of the cheese.
- Place the pan of drained pasta on low heat. Add the egg mixture and ham. Toss to combine. Cook for 2-3 minutes or until heated through. Season with pepper. Serve topped with the chives and remaining cheese.
