Ingredients
3 tsp | Brown sugar |
12 | Nectarines, if large only require 8 |
2 tsp | Butter |
1 Tbsp | Mascarpone, plus extra to garnish |
2 | Lemons, 3 tbsp juice plus half a lemon, juiced, to serve |
2 Tbsp | Pistachio nuts, shelled |
Directions
- Heat the grill. Halve the nectarines and remove the stones, then place on the grill.
- Sprinkle with the brown sugar, then dot with butter (softened) and mascarpone. Grill for 3 minutes then turn over, squeeze over the lemon and continue to cook for another couple of minutes or until tender.
- Finely chop the pistachios and toast for 2 minutes. Sprinkle over the nectarines before serving with the extra mascarpone.
