This healthy lettuce wrap encloses all things green along with a herby mayo dressing (and some cooked prawns). It makes a perfect lunch or snack and is just the right colour to be part of a St Patrick's Day menu on March 17.
Directions
- Make a green sauce by blitzing together 2 large Tbsp each of mayonnaise and mascarpone (or sour cream), a large handful chopped dill (or tarragon), the zest and juice of 1 lime and salt and freshly ground black pepper.
- Wash and dry some cos lettuce and rocket leaves. Evenly slice up a couple of baby cucumbers, spring onion, blanched green beans and avocado.
- Layer cooked prawns, sliced cucumber, spring onion, blanched beans, rocket and parsley leaves across the cos leaves. Season, drizzle generously with green sauce, fold lengthwise and eat.
