It scores the winning goal being super dense in nutrients without the 'guilt' factor of eating high calorie pizza.
Ingredients
1 head | Broccoli |
1 cup | Spinach leaves |
1 packet | Smoked salmon pieces (Main) |
4 Tbsp | Salsa verde |
1 | Zucchini, shredded |
½ cup | Sun-dried tomatoes, or fresh tomatoes |
½ bag | Pumpkin seeds |
Directions
- Preheat Oven to 180 degrees. Steam and puree the Broccoli and spread on to a baking sheet. Bake for 25 minutes or until it has dried out and formed a bread like consistency base. Whilst in smashing mode either food process of pummel the Pumpkin seeds into a paste and set aside (this forms the 'cheese').
- Cover the green bread base with the Salsa Verde and scatter the ingredients wildly over the top excluding the seed cheese. Using your fingers use teaspoon sized pieces of the Pumpkin seed paste and roll into the balls. Flatten the domes into disks and place at random on the pizza.
- Bake for 12 minutes or until the 'cheese' has crisped. Slice and serve with a healthy smile and a sense of humour.
