A great dish when beans are plentiful to serve with grilled or pan-fried fish and crusty bread.
Ingredients
500 g | Green beans, trimmed (Main) |
¼ cup | Olive oil |
3 | Garlic cloves, crushed |
1 can | Chopped tomatoes, approx 400-420g |
1 small handful | Fresh basil |
1 Tbsp | Marjoram, picked leaves |
Directions
- Steam the green beans until just tender.
- Pour the olive oil into a heavy-based saucepan, add the garlic and cook for 1 minute (do not allow to colour). Add the finely chopped tomatoes and herbs and season with salt. Simmer for about 5 minutes to allow the flavours to mingle.
- Stir through the steamed beans and leave to sit for 5 minutes before serving with lemon wedges for squeezing and crusty bread.
