I love Mediterranean flavours and summer is a great time to have citrus fruits. This recipe reminds me of bieng back in Greece where the food is so fresh and tasty. I serve these steaks with a fresh Greek salad, this is great for the BBQ. I used Silver Fern Farms Lamb Steak.
Ingredients
2 packets | Lamb medallions (Main) |
1 | Spring onion, finely chopped |
3 large | Lemons, zest and juice, to be used for lamb and tzatziki |
3 Tbsp | Fresh mint, finely chopped |
3 Tbsp | Fresh oregano, finely chopped |
6 cloves | Garlic, for the lamb and tzatziki |
¼ cup | Olive oil |
1 cup | Natural yoghurt |
½ medium | Cucumbers, chopped |
2 Tbsp | Fresh dill, finely chopped |
Directions
- In a bowl mixed the chopped spring onion, mint and oregano, 4 crushed garlic cloves together with salt and pepper and rub over the steaks. If you can leave them for an hour at least.
- While the steaks are marinating make the tzatziki. In a medium bowl, whisk together the yoghurt, chopped cucumber, 2 crushed garlic cloves, lemon zest and the juice of your remaining lemon and chopped dill. Refrigerate until ready to cook the steaks.
- When ready to cook the lamb mix the olive oil, juice of 2 lemons and their zest in a bowl and combine until the mixture has become thicker. Coat the steaks and cook in a medium hot fry pan with olive oil for a few minutes on each side or until they cooked to your liking.
