Ingredients
150 g | Butter |
150 g | Caster sugar |
1 | Lemon, zested |
3 | Eggs |
150 g | Self raising flour (Main) |
1 cup | Brazil nuts, toasted and roughly chopped (Main) |
2 cups | Apples, golden delicious, peeled and chopped (Main) |
Glaze
2 | Lemons, juiced (Main) |
2 tsp | Butter, soft |
3 Tbsp | Icing sugar, sifted |
Directions
- Preheat oven 180C. Grease a 22cm cake tin.
- Cream butter, sugar and zest until light then add eggs and mix well.
- Fold in flour, nuts and apples then spoon into tin and bake for about 45 minutes or until a skewer inserted tests clean.
- Combine glaze ingredients in a small pot and warm through, stirring, then pour over warm cake.
