Great for using up those frozen egg whites. The friands keep moist for several days or they can be frozen.
Ingredients
200 g | Ground almonds |
1 cup | Icing sugar, and extra to dust |
⅓ cup | Gluten-free flour mix (Main) |
2 | Lemons, finely grated rind only |
5 | Egg whites (Main) |
150 ml | Almond oil, we used Olivado Extra Virgin Sweet Almond Oil |
½ cup | Sliced almonds, flaked (Main) |
Directions
- Preheat the oven to 200C. Lightly oil a 9-hole friand pan.
- Combine the ground almonds, icing sugar, baking mix and grated lemon rind in a bowl. Add the unbeaten egg whites and stir to mix well. Stir in the oil.
- Spoon the mixture evenly into the friend holes to about ½-⅔ full. Sprinkle lightly with the sliced almonds.
- Bake for about 20 minutes or until the mixture comes away from the sides. Turn out on a wire rack to cool. Dust with icing sugar.
