This muffin recipe uses simple, inexpensive ingredients for those with allergies or looking for a healthier, more nutritious baking option for lunch boxes or with a cup of tea.
Ingredients
1 cup | LSA (Linseed, Sunflower and Almond mix), Or ground almonds |
3 Tbsp | Rice flour |
2 tsp | Ground cinnamon |
2 Tbsp | Sunflower seeds, Optional |
½ tsp | Baking soda |
1 pinch | Salt |
¼ cup | Coconut oil, Melted |
2 Tbsp | Honey, Melted |
3 | Eggs |
2 | Apples, Grated (Main) |
Directions
- Preheat oven to 180 degrees. In a bowl, mix the flours, baking soda, cinnamon, salt and seeds.
- Add the eggs, apple, honey & coconut oil and mix well.
- Spoon the mixture into a greased muffin tray and bake for 20-30mins (depending on size of muffin tins) or when a skewer comes out clean.
- Remove from tray, cool on a wire rack and enjoy!
