For the skewers
| 1 packet | Bamboo skewers |
| 20 | Prawns (Main) |
| 3 cloves | Garlic |
| 2 Tbsp | Ginger |
| 2 tsp | Brown sugar |
| 1 | Lemon |
| 1 tsp | Sesame oil |
| 1 Tbsp | Vegetable oil |
Salsa
| 1 | Mango (Main) |
| 1 | Onion |
| 1 | Banana |
| 1 | Chilli |
| 1 Tbsp | Lime juice |
| 1 tsp | Vegetable oil |
Directions
- Soak the skewers in water. Marinate the prawns with the garlic, ginger, sugar, zest and juice, sesame and vegetable oils and season with salt. Leave for at least 1 hour.
- Make the salsa by finely dicing the mango, onion, banana and chilli. Mix with salt, lime juice and the oil and leave for a few hours to let the flavours develop.
- Skewer the prawns and cook on a hot grill for approximately two minutes on each side, depending on their size. Serve hot with the salsa.
