Ingredients
125 g | Softened butter |
¼ cup | Brown sugar |
2 Tbsp | Golden syrup, or maple syrup |
2 Tbsp | Milk |
1 tsp | Vanilla extract |
1 ½ cups | Plain flour |
1 tsp | Baking powder |
1 tsp | Ground ginger |
3 Tbsp | Crystalised ginger, chopped (Main) |
⅔ cup | White chocolate bits, or roughly chopped white chocolate (Whittaker's works well) (Main) |
Directions
- Using a wooden spoon, beat together the butter and sugar until well combined, then add the golden or maple syrup, milk and vanilla, and beat until well combined.
- Sift over the flour, baking powder and ground ginger, then add the crystalised ginger and the chocolate. Mix together with a wooden spoon, and then gently knead with your hands to form a soft dough.
- Roll out small balls of dough (about 1 teaspoon sized) and place on a greased oven tray. Flatten down with a fork or spoon.
- Bake at 180C for 12-15 minutes until golden.
