Ingredients
4 | Boneless chicken thighs, sliced (Main) |
⅓ cup | Oyster sauce |
2 | Red chillies, chopped |
2 Tbsp | Shaoxing wine, chinese cooking wine |
1 clove | Garlic, crushed |
¼ cup | Fresh coriander, chopped |
Peanut and mint dipping sauce
¼ cup | Lime juice |
½ cup | Roasted peanuts, chopped |
½ cup | Mint leaves |
1 tsp | Fish sauce |
Directions
- To make the dipping sauce, place the lime juice, peanuts, mint and fish sauce in a bowl and stir to combine. Set aside.
- Place the chicken, oyster sauce, chilli, ginger, Shaoxing, garlic and coriander in a bowl and toss to coat. Set aside for 30 minutes to marinate.
- Thread the chicken onto skewers.
- Heat a chargrill pan or barbecue over high heat and chargrill or barbecue the chicken for 3-4 minutes each side or until cooked through. Serve with the dipping sauce.
Tip:You could also serve these skewers with sweet chilli sauce or hoisin sauce.
