The baking mix makes the biscuits relax to flat like a cracker. GF flour blend can be substituted for thicker crisper biscuits.
Ingredients
2 | Eggs, size 6 or 7 |
1 ¼ cups | Granulated white sugar, divided |
¼ cup | Unsalted butter, softened |
¼ cup | Vegetable shortening, e.g Kremelta |
2 cups | Baking mix, Healtheries GF |
2 tsp | Baking powder, sifted into baking mix |
3 tsp | Ground cinnamon |
Directions
- Preheat oven to 191C.
- In large bowl, mix eggs, 1 cup of the sugar, the butter and shortening. Blend in baking mix until dough forms.
- In small bowl, mix remaining 1/4 cup sugar and the cinnamon
- Line cookie sheets with parchment paper.(may need to use 3 or 4 sheets)
- Shape dough into 1 inch balls. (If dough feels too soft for shaping into balls, put dough in freezer for 10 to 15 minutes.) Roll each ball in sugar-cinnamon mixture. Place balls 2-3 inches apart on cookie sheets. Bake 7 to 10 minutes or until set. Immediately remove from cookie sheets to cooling racks.
