Beat the heat on a hot day with this refreshing starter.
Directions
- Cut a punnet of colourful cherry tomatoes in halves or quarters. Add an equivalent amount of chopped watermelon and place in the freezer until they're just firm.
- Add the zest and juice of a lemon or lime, 1 finely chopped spring onion, a big handful of just cooked prawns, fresh coriander or chervil, a good pour of hot sauce, a dash of worcestershire sauce and a little salt and pepper. Toss together well.
- Layer into tall cocktail glasses and you're instantly cooler. A cheeky fresh oyster or two along its brine will also fit right in.
