Fried whitebait salad with avocado and orange

Ingredients

2 tsp	Butter
1 sprinkle	Salt
1 tsp	Honey
4	Oranges
2	Avocados
1 Tbsp	Avocado oil
3 handfuls	Salad greens
300 g	Whitebait (Main)
1 Tbsp	Grapeseed oil

Directions

1. Peel and slice the avocado. Peel and segment 3 of the oranges.
2. Arrange the avocado and oranges on a serving platter with the salad greens.
3. Squeeze the third orange and combine the juice with the avocado oil and whisk in the honey.
4. Heat a pan, add the grapeseed oil and butter then the whitebait. Cook for 3-4 minutes while gently stirring, then remove and spoon over the salad.
5. Drizzle over the dressing and sprinkle with salt.
