Can't beat fresh home gown organic Hawaiian Purple Kumara, Fresh Coconut & Fish soup. My husband is a school teacher and loves gardening. The last 3 years he's been grown Kumara on the verge at the front of our house. Walkers, cyclists, runners are stopping by to admire the Kumara growing on the verge. When harvested them. We shared them with neighbours, friends people from all walks of life.
Ingredients
1 medium | Purple kumara (Main) |
2 cups | Coconut milk |
2 medium | Fish heads |
3 small | Long red chillies |
2 tsp | Sea salt |
1 tsp | Chilli pepper |
1 handful | Fresh oregano |
2 ounces | Chopped parsley |
1 dash | Smoked eel |
Directions
- Boil Kumara. Leave it to cool down. Grated the fresh coconut and use the coconut husk to squeeze the coconut milk out. Boil the fish in the coconut milk, add chills, oregano, salt & pepper. Peel off the Kumara skin. Once the fish cooked. Drain the Juice into the food processor and add the Kumara. Process till it is very stewed. Topping with dry eel and add salt & pepper splash parsley on top
- You can heat up the soup in the microwave to have it eithe arm or hot.
