Serve the fresh berry cups in small cut crystal glasses or use martini glasses. Place a silver teaspoon on the side. Use whichever combination of fresh berries you prefer and if you don't want to use Pimms, elderflower cordial is also delicious.
Ingredients
500 g | Blueberries |
500 g | Strawberries, sliced |
500 g | Raspberries |
200 ml | Pimms |
½ cup | Caster sugar |
1 cup | Freshly squeezed orange juice, strained |
½ cup | Mint leaves, shredded |
1 serving | Cream, softly whipped for serving |
Directions
- Combine the berries in a bowl.
- In a second bowl, stir together the Pimms, caster sugar and orange juice until the sugar has dissolved. Pour over the berries and leave at room temperature for 30 minutes. Add the mint.
- To serve; spoon the berries and liquid into small glasses, top with a little whipped cream and serve with elegant spoons.
