Get the family into the kitchen to make this rice from Vanessa Baxter which is perfect to accompany her child-friendly sticky chicken drumsticks and healthy zoodle salad.

Ingredients
1 cup | Jasmine rice (Main) |
30 g | Butter |
2 | Garlic cloves, minced |
2 Tbsp | Ginger, minced |
2 cups | Vegetable stock, more if required (Main) |
Directions
- Rinse and wash your rice until the starch has completely disappeared and the water runs clear. This may take 5-8 times of washing.
- Heat the butter in the pan you plan to use to cook your rice. Add the minced garlic and ginger to the melted butter. Saute for 1 minute. Add in the washed rice, along with the liquid.
- Bring the liquid to the boil. As soon as it boils, pop on the lid and reduce the temperature to low/medium so that it remains at a simmer. Put the timer on for 15 minutes. After 15 minutes carefully lift the lid quickly to check all the liquid has been absorbed. Pop the lid back on and allow the rice to sit for a few moments to steam dry.
