The fish can be marinated for up to 12 hours.
Ingredients
250 g | Snapper, skinned and boned, or use tarakihi (Main) |
¼ cup | Lemon juice |
1 serving | Flaky sea salt |
1 serving | Freshly ground black pepper |
½ large | Avocados, firm but ripe |
3 Tbsp | Avocado and lime oil |
1 small | Shallot, diced |
2 Tbsp | Coriander, finely chopped |
2 Tbsp | Mint leaves, finely chopped |
Directions
- Cut the fish into small dice, place in a shallow dish and drizzle with the lemon juice. Marinate for at least 1 hour. Drain and place in a bowl. Season.
- Halve, stone and peel the avocado. Dice the flesh. Add to the fish together with the oil and shallot.
- Just before serving, fold in the herbs.
