200 g | Goat's cheese (Main) |
4 handfuls | Rocket |
½ cup | Red wine vinegar |
1 Tbsp | Brown sugar |
Directions
- Cut the stems off and slice figs into circles. Remove stones from the dates and break the dates into pieces. Crumble the goat's cheese.
- To make the dressing, pour the vinegar into a small saucepan and bring to boil.
- Keep boiling until the vinegar has reduced by half, then add the sugar, stirring to dissolve, and let cool.
- Arrange rocket leaves on serving plates with the figs, dates and cheese, then drizzle the dressing over.
