These bagels are topped with a little Christmas spice mix. You could use this mix from my homemade festive sausage recipe otherwise use five-spice powder or cinnamon. For a savoury note, serve with crispy bacon rashers.
Ingredients
¼ cup | Mascarpone, or use creme fraiche |
¼ cup | Thick greek yoghurt |
½ | Lemons, zest and juice |
1 pinch | Caster sugar, or a little honey to sweeten |
¼ tsp | Christmas spice, see link above for how to make or use cinnamon or five-spice powder |
1 handful | Berries, use whatever fresh ones you want and some sliced strawberries and sliced banana (Main) |
2 | Abe's Cinnamon and Raisin Bagels, split, lightly toasted (Main) |
1 drizzle | Honey, spread over each bagel half |
1 drizzle | Apple syrup, or maple syrup over each half |
4 sprigs | Mint, for garnish |
Directions
- Whisk mascarpone or creme fraiche and yoghurt with the lemon zest and juice, a pinch of sugar or honey and Christmas spice mix (or use five-spice or cinnamon). Fold fresh berries, strawberries and banana into the cream. Spread toasted bagels with honey and top generously with the fruit spread. Serve drizzled with an apple or maple syrup and garnish with mint. Add a side of crispy bacon for a savoury note.
