I have filled one of the divisions in the gift box above with these festive afghans. See more edible Christmas gift ideas below the recipe on this page. The red icing is similar to ready-made white royal icing both available from supermarkets.
Ingredients
250 g | Butter, softened |
¾ cup | Caster sugar |
1 | Egg |
1 cup | Plain flour |
½ cup | Self raising flour |
½ cup | Dark cocoa powder (Main) |
2 cups | Cornflakes (Main) |
Topping
25 | Walnut halves |
250 g | Ready-made icing, red |
Directions
- Preheat the oven to 150°C. Line two baking trays with baking paper.
- Cream the butter, caster sugar and egg, until light. Sift in the flours and cocoa and mix well. Add the cornflakes and mix, until just combined.
- Roll into 25 balls about 25g each. Place on the prepared trays. Flatten lightly with a fork. Bake for 25-30 minutes. Cool on a wire rack.
- Roll the icing between 2 sheets of waxed paper or similar to about 5mm thick. Cut into star shapes. Place on top of the biscuits. Place a walnut half in the centre of each. Store in an airtight container in a cool place.
