Salmon is so good for you, it’s rich in Omega-3 fatty acids, a great source of protein, high in B vitamins, a good source of potassium and loaded with selenium. Not only does it have all these good things going on it’s so versatile and lends itself to creating all sorts of meals; show off to your friends with this dish.
Salmon
1 medium | Salmon fillet, (200g), bones and skin removed (Main) |
2 tsp | Coarse sea salt |
2 Tbsp | Caster sugar |
1 tsp | Coriander seeds, crushed |
1 Tbsp | Chopped dill |
1 Tbsp | Apple juice |
To serve
1 | Apple, thinly sliced, green and/or red, unpeeled |
1 | Spring onion |
2 sprigs | Coriander |
Dressing
1 Tbsp | Lemon juice |
3 Tbsp | Apple juice |
1 tsp | Sesame oil |
1 tsp | Tamari sauce |
2 tsp | Toasted sesame seeds |
Directions
- To cure salmon, place fillet in a shallow dish. Combine salt, sugar, coriander seeds and dill. Spread on the bottom and top of fillet then sprinkle over apple juice. Cover dish with plastic film, place a weighted board on top and leave in the refrigerator for 12-24 hours.
To Serve
- Thinly slice spring onion lengthways and place in ice water.
- Cut cured salmon fillet diagonally in thin slices and divide between 4 plates, along with a small salad of thin apple slices, spring onion and a garnish of dill. Combine lemon juice, apple juice, sesame oil and light soy then spoon over salad. Sprinkle toasted sesame seeds over top and serve. Garnish with coriander leaves.
