Falafel burger
1 can | Chickpeas, drained well (Main) |
½ | Onions, chopped |
1 can | Lentils, drained well (Main) |
3 | Garlic cloves, crushed |
½ cup | Fresh coriander |
½ cup | Parsley |
2 tsp | Ground cumin |
½ tsp | Chillies |
1 tsp | Ground coriander |
½ | Lemons, zest |
3 Tbsp | Flour |
½ tsp | Salt and freshly ground black pepper |
1 | Cornflour, for dusting the patties |
1 drizzle | Oil, to fry |
1 packet | Pita pockets, or Turkish bread buns |
Salad
1 | Cucumber, sliced |
1 | Red onion, thinly sliced |
1 bunch | Fresh coriander, chopped |
Red pepper aioli
2 | Red peppers (Main) |
3 Tbsp | Mayonnaise |
½ cup | Natural yoghurt, unsweetened |
1 | Garlic clove, crushed |
½ | Lemons, zest and juice |
1 to taste | Freshly ground black pepper |
Directions
Falafel burger
- To make falafel, place chickpeas, lentils, onion, garlic, parsley, fresh coriander, cumin, ground coriander,chilli, lemon zest , and salt and pepper in a food processor and mix well.
- Rest the mix in the fridge for an hour then form into patties.
- Dust in cornflour and fry well in hot oil.
- Construct burger in toasted pita pockets (or Turkish bread buns) with red pepper aioli, falafel patties, a quick salad of cucumber, tomato, red onion and fresh coriander leaves and more red pepper aioli.
Red pepper aioli
- Roast, peel, deseed and finely chop the red peppers.
- Mix yoghurt with mayonaise, the chopped red peppers, garlic, the zest and juice of ½ lemon and ground black pepper to taste.
