Eat My Lunch turns one this week and it’s incredible to think that we have been making lunches every morning for a whole year. In that time we’ve made more than 350,000 lunches, 180,000 of those being given to hungry school kids.
It is so rewarding seeing the smiles on the kids’ faces when we deliver them a wholesome lunch each day. Part of the fun has been choosing the lunch menus and what to put in each lunch box. As we have launched the Hungry Lunch and most recently the Gourmet lunch, we have been able to experiment more and try new items.We try to add as much variety as possible, but there are certainly some favourites.
One of the most popular items in our lunches has been the pretzel roll. The soft bread with a salty brown crust is perfect for sandwich fillings. This roast beef roll is simple with traditional flavours like horseradish and mustard, but I’ve added some witlof for bitterness and pickles for texture and bite. This roll is going to be in our lunch this Wednesday to celebrate our first birthday.
Ingredients
2 | Onions, thinly sliced |
1 | Bay leaf |
1 drizzle | Olive oil |
1 | Pretzel roll (Main) |
1 Tbsp | Mayonnaise |
1 tsp | Mustard |
¼ tsp | Horseradish |
4 pieces | Roast beef, rare, thinly sliced |
1 leaf | Witloof |
3 slices | Gherkins |
Directions
- Cook onions with the bay leaf in olive oil on a low heat for about an hour, allowing them to caramelise naturally. Once caramelised, season with salt and set aside to cool.
- Cut pretzel roll in half lengthways but not all the way through.
- Mix mayo with mustard and horseradish. Spread on both sides of the roll.
- Layer roll with beef, witloof, caramelised onions and gherkins.
