This is a great recipe to use up leftover meat preferably lamb. Why? Well it's a classic combination really, lamb and curry. I had some leftover lamb and I wanted to make a creamy salad, combined the two together and I was left with a very satisfied cook ego and tummy! Enjoy!
Ingredients
4 cups | Lamb roast, cooked and chopped (Main) |
1 Tbsp | Curry powder |
½ tsp | Salt |
½ cup | Mayonnaise |
½ cup | Red capsicums, chopped |
½ cup | Green grapes, sliced |
¼ cup | Celery, sliced |
¼ cup | Roasted peanuts, chopped |
1 Tbsp | Fresh coriander, chopped |
1 | Lemon |
0 | Cos lettuce leaves |
Directions
- In a large bowl mix the lamb pieces, curry powder, and salt together.
- Blend in the mayonnaise. Mix in the red capsicum, grapes, celery and peanuts. Add the coriander and squeeze juice from the lemon over the salad and mix in. Cover and place in refrigerator for an hour or until ready to serve.
- Serve on a bed of cos lettuce leaves.
