Use as a base for whatever combination of dried fruits and nuts you have on hand — they are as good just with sultanas and as they are with more exotic fruits like dried cherries, toasted hazelnuts and coconut. Fresh or frozen fruit and berries work too. Because they are made to fuel rather than impress, you can omit the sugar and butter — they become more dense and not as sweet.
Ingredients
2 | Bananas, ripe |
1 | Egg |
50 g | Butter |
½ tsp | Baking soda |
½ cup | Milk, heated |
2 tsp | Baking powder |
1 ½ cups | Wholemeal flour |
¼ tsp | Cinnamon |
¼ tsp | Nutmeg, grated |
2 Tbsp | Brown sugar |
¾ cup | Dried fruit, and nuts |
Directions
- Heat oven to 200C and grease a 12-hole muffin pan.
- Mash bananas and add egg, butter and baking soda dissolved in milk. Add remaining ingredients and mix until just combined. Spoon into muffin pan and bake for 15-20 minutes.
