A lovely accompaniment to roast turkey. Poured into smaller jars, it would make a great present for Christmas Day cooks. See here for my recipe for tender roast turkey cooked in an oven bag.
Ingredients
1 | Granny Smith apple, peeled, cored and chopped |
1 cup | Cranberries, frozen (Main) |
1 cup | Blueberries (Main) |
1 small knob | Ginger, grated (Main) |
2 Tbsp | Honey, use up to 3 Tbsp |
1 tsp | Spice mix |
2 | Kaffir lime leaves, or 1 fresh bayleaf (Main) |
1 | Grapefruit, zest and juice (or use an orange or lemon) (Main) |
1 splash | Apple cider vinegar |
½ cup | Apple juice (Main) |
Directions
- Put all ingredients into a saucepan. Simmer, stirring often, until the liquid and fruit have reduced into a jammy sauce.
- Pour into a sterilised jar, seal and cool, then refrigerate.
