Ingredients
1 sheet | Puff pastry, 200g |
4 | Courgettes, thinly sliced |
1 | Lemon, rind only |
1 Tbsp | Oil |
1 pinch | Salt and pepper |
1 | Free-range egg, beaten |
150 g | Feta |
½ cup | Mint leaves |
Directions
- Preheat oven to 200C. Line a baking tray with baking paper and lie the pastry on top. Make a border using a knife 1 cm from the edge of the pastry, making sure not to cut all the way through the pastry.
- Place the courgette, lemon, oil, salt and pepper in a large bowl and mix together.
- Layer the courgette on the pastry inside the border and brush the entire thing with the egg. Place in the oven and bake for 20-25 minutes.
- Crumble the feta over the top and add the mint leaves.
