Here is an easy to follow recipe using corned beef - ideal for new cooks, flatters and those living away from home to try out.

Ingredients
2 | Potatoes, medium size, scrubbed |
1 ½ cups | Corned beef, cooked and diced (Main) |
2 | Spring onions, finely chopped |
¼ cup | Parsley, chopped |
50 g | Butter, softened |
Directions
- Boil the potatoes in their skins until just tender, about 25-30 minutes. Once cool enough to handle, peel and discard skins. Grate potato flesh using the coarse side of your grater.
- Place in a bowl with the corned beef, spring onion, parsley and half the butter. Season with freshly ground black pepper. Shape mixture into 8 even-sized cakes. Press down to flatten a little.
- Melt the remaining butter in a large non-stick frying pan, place in the potato cakes and cook on both sides, turning once, until golden and hot in the centre.
- Serve with your favourite chutney and a salad or place a poached egg or two on top of each serving.
