Ingredients
| 1 cup | Mussels, chopped (Main) |
| 1 ½ cups | Corn kernels, fresh (Main) |
| ½ cup | Plain flour |
| 2 tsp | Chillies, fresh, finely chopped |
| 1 | Egg, separated |
| 1 Tbsp | Parsley, finely chopped |
| 1 Tbsp | Butter, melted |
| 1 cup | Milk, approximately |
| 1 splash | Vegetable oil, for frying |
| 1 | Avocado, to serve |
| 1 | Lemon, cut into wedges to serve |
Directions
- Combine the corn, mussel meat, flour, seasoning and chilli in a bowl.
- Make a well in the centre and add the lightly whisked egg yolk with the parsley and butter.
- Pour in the milk and gently mix. Whisk the egg white then fold into the mixture.
- Heat a fry pan and lightly oil, then add spoonfuls and fry until golden. Turn over and repeat. Serve with avocado and lemon wedges.
