This stack is special because it is a real hunger buster and quite often it can be used as a main meal in itself, combining chicken, bacon, cheese, salad, caramalised onions, relish and aioli.
Ingredients
4 pieces | Frozen spinach |
2 cups | Corn kernels (Main) |
2 Tbsp | Sweet chilli sauce |
1 | Egg |
2 ½ cups | Self raising flour |
1 tsp | Baking powder |
1 ½ cups | Soda water |
Directions
- get out food processor.
- place all ingredients in food processor and blitz until all combined. the mix should have the same consistency as a pancake mix - add more soda water if required.
- drop large spoonfuls into hot frypan heated with a little oil turn fritters over once bubbles start forming and cook other side place fitters on tray and keep warm in low oven
- prepare your corn fritter stack by placing two fritters side by side place tomato relish on one fritter place aioli or mayonnaise on the other put 3 cos lettuce leaves on top of fritter with relish, followed by small handful of grated cheese, caramalised onions, 4 slices of chicken breast, 2 pieces of streaky bacon, salt and peeper, and vinaigrette place fritter with aioli on top to make a stack and push a satay stick through to hold together
- stack can be reheated in the microwave or toasted on hot press
