This recipe is sugar-free but you will still have to practice moderation. Use the appropriate dark chocolate to make this gluten and dairy-free. Read Mikki's article on the irrational behaviour around junk foods here.
Ingredients
1 ½ cups | Shredded coconut, (Ceres or Pams are preservative-free), plus extra for coating (Main) |
1 cup | Ground almonds (Main) |
4 Tbsp | Coconut oil, melted |
1 Tbsp | Freeze-dried raspberry powder, I used Fresh As, use more/less to taste |
1 | Lemon, zested |
1 serving | Dark chocolate, melted, optional |
Directions
- Line a shallow baking dish with baking paper.
- Mix all ingredients (except chocolate if using) and press into tray.
- Cut in to squares and refrigerate or freeze to set. Store in fridge or freezer.
