This is one delicious loaf that everyone will love. It’s so easy to make — mash bananas and mix all ingredients together, that’s it! Perfect for the kids to make. This loaf is sweetened with banana and honey. With no refined sugar, it’s a great healthy lunch box option too. Will keep (unsliced) in an airtight container for up to 5 days. Makes 1 loaf.
Ingredients
½ cup | Coconut oil |
½ cup | Liquid honey |
3 | Bananas, large, ripe, mashed (Main) |
2 cups | Coconut threads (Main) |
2 | Lemons, finely grated zest of |
1 cup | Self raising flour, or 1 cup buckwheat flour and 1 tsp gluten-free baking powder to make loaf gluten-free |
4 | Eggs |
1 pinch | Salt |
Directions
- Heat oven to 180C.
- Gently melt coconut oil and honey together in a small pot.
- Use a fork to mix mashed bananas, coconut thread, flour, melted coconut oil and honey mixture, eggs, lemon zest and salt together in a large mixing bowl until well combined.
- Pour into a greased loaf tin and bake for 1 hour or until a skewer inserted into the middle comes out clean.
