The granola parfait makes a healthy start to the day but it would also make a refreshing and wholesome dessert.
Ingredients
1 bunch | Rhubarb, cut into finger-sized pieces (Main) |
1 | Orange, zest and juice |
1 small knob | Ginger, cut into thin strips or finely grated |
2 Tbsp | Runny honey |
1 pottle | Coconut yoghurt |
2 | Bananas, chopped |
2 | Kiwifruit, sliced (more or less according to taste), or use mango if in season |
4 servings | Granola, we used Be Natural Coco-Nutty Coconut, Almond, Spelt and Cinnamon Granola (Main) |
Directions
- Preheat oven to 170C. Toss rhubarb in a bowl with the orange zest and juice, the ginger and runny honey. Place in a roasting dish, cover with foil and bake for 40 minutes until tender. Cool, then chill.
- In large glasses, layer rhubarb, coconut yoghurt, chopped banana, kiwifruit or mango, and top with Be Natural Coco-Nutty Coconut, Almond, Spelt and Cinnamon Granola.
