Serve this as a side dish, or with eggs for breakfast. We've tossed ours with roasted capsicum strips and coriander. Mexican Chorizo con Papas can also be made using leftover boiled or mashed potatoes. Try adding shredded cabbage, and make a real hash of it.
Ingredients
2 | Chorizo sausages, fresh ones, meat squeezed from casings (Main) |
3 | Agria potatoes, or 2 if they are large, scrubbed and cut into cubes |
1 | Finely chopped spring onion, or use 2 if you like, finely sliced |
Directions
- Into a hot pan, put the fresh chorizo meat. Sear and cook to render the fat then remove the sausage to one side, leaving the fat in the pan.
- Add 2-3 scrubbed and cubed agrias, and fry, turning often, until they are crispy and tender. Add spring onion and saute to wilt. We tossed ours with roasted capsicum strips and coriander.
