This healthy chocolate mousse from Dr Libby is made with dates, cacao and coconut. Serves 2 to 4 people, and only takes about 5-10 minutes to make. This mousse is freezer friendly so can be made ahead of time.
Ingredients
1 | Coconut, flesh of a young coconut |
1 | Water, filtered |
2 | Dates, pitted and roughly chopped |
½ cup | Cashew nuts, raw |
3 Tbsp | Cocoa powder (Main) |
1 pinch | Salt |
1 serving | Mixed berries |
Directions
- Place all the ingredients except the berries in a blender.
- Add enough filtered water to enable the blade to work effectively and process until creamy and smooth.
- Pour the mixture into attractive glasses (eg martini glasses or tumblers)
- Top with a mix of berries.
