If you've done something for me, whether it be helping to move house, solving a tricky problem at work, or simply lending an ear, then it's likely you'll have received a batch of melting moments from me. They're my go-to baked good to say "thank you", and after doing the tradition lemon or passionfruit melting moment to death (as delicious as they are!) I decided to experiment with different flavours.
Ingredients
250 g | Unsalted butter |
⅔ cup | Icing sugar |
1 ¾ cups | Plain flour |
¼ cup | Cocoa powder |
50 g | Unsalted butter |
1 cup | Icing sugar |
2 Tbsp | Nutella |
100 g | Dark chocolate (Main) |
¼ cup | Hazelnuts, chopped |
Directions
- Preheat oven to 160. Line 2 baking trays with baking paper. Using an electric mixer, beat butter, sugar and vanilla until fluffy.
- Sift flour, cocoa and custard powder over butter mixture. Stir with a wooden spoon until soft dough forms.
- Roll level tablespoons dough into 32 balls. Place on prepared trays, leaving room for spreading. Using a fork dipped in flour, lightly flatten each biscuit until 1cm thick. Bake for 15 to 20 minutes or until light golden. Cool on tray for 10 minutes. Transfer to a wire rack to cool completely.
- Meanwhile, make filling Using an electric mixer, beat butter, icing sugar, and Nutella in a bowl until light and creamy. Feel free to add more Nutella as per your own personal preference. Set aside.
- Once the biscuits are cooled, melt your dark chocolate in a heat-proof bowl in the microwave, taking care not to overcook or burn your chocolate. Dip each biscuit into the melted chocolate, so that about half of the biscuit is now covered in dark chocolate. (Optional: Lightly press the melted chocolate side of the biscuit into chopped hazelnuts). Place each biscuit onto trays lined with baking paper to let the chocolate set (you can put the tray in the fridge to speed up the cooling process).
- Once the chocolate has set, spread the flat side of 1 biscuit with 2 teaspoons filling. Sandwich with 1 other biscuit (I like to line up the chocolate, so the chocolate covered sides match!). Repeat with the remaining biscuits and filling. I like to wrap 5 or 6 of these biscuits in cellophane with ribbon to give as gifts :)
