Ingredients
3 cups | Grated cheese, See Note below (Main) |
1 Tbsp | Potato starch, or use cornflour |
1 cup | Cream |
2 | Pickled jalapeno chillies, finely chopped (Main) |
2 Tbsp | Chilli sauce, mild |
Directions
- Gently heat cheese, potato starch (or cornflour), cream, jalapenos and chilli sauce. Stir until the cheese is melted to a sauce. Serve with warmed corn chips as a dip, or pour overChicken and queso nachos.
To make corn chips at home:Cut corn tortillas or flat breads into triangles (you can also use flour tortillas), toss with a little olive oil, sea salt flakes and ground black pepper and bake in a hot oven until just coloured.
Note:We used colby and smoked cheddar. For a smooth dip, use soft creamier cheeses than hard sharp cheddars.
