These delicate sandwiches will be winners at everything from drinks parties to afternoon tea. Here's how to poach a chicken to use in the filling.
Ingredients
1 ½ cups | Chicken, poached (Main) |
1 Tbsp | Mustard |
3 Tbsp | Mayonnaise, for the chicken salad |
½ tsp | Salt and freshly ground black pepper |
1 | Lemon, juice |
½ loave | White sandwich bread, or wholemeal sandwich bread (Main) |
2 handfuls | Watercress (Main) |
1 tsp | Mayonnaise, for buttering the bread |
Directions
- Make a simple chicken salad with the chopped poached chicken (make sure it has cooled) mixed with mustard, mayonnaise, lemon juice, salt and freshly ground pepper.Combine and chill until required.
- Spread slices of fresh sandwich bread with the chicken salad, top with another slice of bread that has been lightly "buttered" with mayonnaise, top with watercress, then another slice of bread.
- Press down a little, then cut off the crusts and cut into fingers.
