Ingredients
| 3 cups | Arborio rice (Main) |
| 1 | Egg, lightly beaten |
| 1 | Egg, yolk |
| ¼ cup | Rice flour |
| 2 cloves | Crushed garlic |
| ½ cup | Parmesan cheese, finely grated (Main) |
| 1 cup | Cheddar cheese, grated (Main) |
| ½ cup | Chives, chopped |
| 1 to taste | Salt & freshly ground pepper |
| 2 cups | Breadcrumbs, fresh |
| 1 to fry | Vegetable oil |
| 1 to serve | Tomato chutney |
Directions
- Combine the rice, egg, egg yolk, rice flour, garlic, parmesan, cheddar, chives, salt and pepper in a bowl.
- Shape cupfuls into patties and press into the breadcrumbs.
- Heat 1cm of oil in a large frying pan over medium heat and cook the patties, in batches, for 2-3 minutes on each side or until golden and crispy.
- Drain on absorbent paper.
- Serve with tomato chutney.
